Servings and Ingredients
|1 (1.5-lb.) pkg. Hy-Vee Smart Bite strawberry reds potatoes, sliced ¼-inch thick|
|¾ c. yellow onion, slivered|
|1 (7-oz.) pkg. Satori Montamoré Cheddar cheese, finely shredded; divided|
|4 slice(s) Hy-Vee Country Smokehouse thick-sliced applewood slab bacon, crisp cooked and chopped|
|⅓ c. Lillie's Q Smoky Memphis-style smoky barbeque sauce|
|Fresh chives, chopped; for garnish|

- Simply Done 18-inch-wide heavy duty aluminum foil
- Hy-Vee nonstick cooking spray
Meanwhile, spray an 18x16-inch sheet of foil with nonstick spray. Layer potatoes and onion in center of foil. Top with 4-oz. Cheddar cheese and bacon; drizzle with barbeque sauce. Bring long sides up and over potatoes; double-fold to seal. To seal ends, press ends down and double-fold to seal to make a 12x8-inch packet.
Grill for 35 minutes. Remove from grill. Carefully open top of packet; sprinkle with remaining 3-oz. cheese and loosely close packet. Let stand for 5 to 8 minutes or until cheese is slightly melted. Open packet. Garnish with chives, if desired.
