2 c. crushed graham crackers | ||

¼ c. chopped walnuts | ||
3 (8 oz each) pkg cream cheese, softened | ||
1 ½ c. sugar | ||
5 eggs | ||
3 tbsp. lemon juice | ||
1 pt. sour cream | ||
½ c. sugar | ||
1 tsp. vanilla | ||
Fresh fruit, for garnish |
Directions
- Preheat oven to 350 degrees.
- Combine graham cracker crumbs, melted butter and walnuts. Press on bottom and up sides of a 10-inch springform pan.
- Combine cream cheese and 1-1/2 cups sugar. Add eggs, 1 at a time, beating thoroughly after each egg. Beat in lemon juice. Pour filling over crust.
- Bake at 350 degrees for 45 minutes without opening oven door.
- Remove cheesecake from oven.
- Reduce oven temperature to 300 degrees.
- Mix sour cream, 1/2 cup sugar and vanilla. Spread topping over cheesecake.
- Return pan to oven and bake for 15 minutes longer at 300 degrees.
- Cool on rack for several hours. Refrigerate overnight before serving.
- Serve plain or topped with fresh fruit.
