1 lbs. ground beef or turkey | ||
½ c. chopped onion | ||
½ c. shredded carrots | ||
½ c. diced celery | ||
1 tsp. dried basil | ||
1 tsp. Tones fines herbs | ||
4 tbsp. butter or margarine, divided | ||
3 c. chicken broth | ||
1 can(s) water (measured using emptied broth can) | ||
4 c. peeled, diced potatoes | ||
¼ c. all-purpose flour | ||
12 oz. Velveeta cheese, cubed | ||
1 ½ c. milk | ||
¾ tsp. salt | ||
½ tsp. pepper | ||
¼ c. sour cream |
Directions
- Brown meat in a 3-quart saucepan. Drain and set meat aside.
- In same saucepan, saute onion, carrots, celery, basil and fines herbs in 1 tablespoon butter about 10 minutes, until vegetables are tender.
- Add chicken broth, water, potatoes and meat. Bring to a boil.
- Reduce heat. Cover and simmer 10 to 12 minutes or until potatoes are tender.
- Melt remaining 3 tablespoons butter in a small skillet. Whisk in flour. Cook and stir 3 to 5 minutes or until bubbly. Add to soup and bring to a boil. Cook, stirring constantly, 2 minutes.
- Reduce heat to low. Add cheese, milk, salt and pepper. Cook until cheese melts.
- Remove from heat, add sour cream and serve.
