Preheat oven to 350 degrees.
These enchiladas are far from basic, stuffed with ingredients like onion, bell pepper, and oregano.

|1 lbs. lean ground beef|
|1 green bell pepper, seeded and chopped|
|1 medium onion, chopped|
|2 clove(s) garlic, minced|
|1 (15-oz) can Hy-Vee tomato sauce|
|½ tsp. Hy-Vee oregano leaves|
|8 (8-inch each) Hy-Vee flour tortillas|
|2 c. Hy-Vee shredded mild cheddar cheese|
|Green onions, chopped, optional|
|Hy-Vee sour cream, optional|

Brown ground beef with green pepper, garlic and onion until meat is browned and onion is tender. Set aside.
Pour half the tomato sauce into a greased 9-by-13-inch baking dish. Sprinkle with oregano. Set aside.
Spoon 1/4 cup beef mixture onto each tortilla. Top beef mixture with about 2 tablespoons of shredded cheese. Tightly roll each tortilla and place seam-side-down in sauce. Top with remaining sauce and cheese.
Cover and bake for 30 minutes.
Garnish with chopped green onion and sour cream if desired.
