    1 lbs. lean ground beef
    1 green bell pepper, seeded and chopped
    1 medium onion, chopped
    2 clove(s) garlic, minced
    1 (15-oz) can Hy-Vee tomato sauce
    ½ tsp. Hy-Vee oregano leaves
    8 (8-inch each) Hy-Vee flour tortillas
    2 c. Hy-Vee shredded mild cheddar cheese
    Green onions, chopped, optional
    Hy-Vee sour cream, optional

    Directions

    1. Preheat oven to 350 degrees.

    2. Brown ground beef with green pepper, garlic and onion until meat is browned and onion is tender. Set aside.

    3. Pour half the tomato sauce into a greased 9-by-13-inch baking dish. Sprinkle with oregano. Set aside.

    4. Spoon 1/4 cup beef mixture onto each tortilla. Top beef mixture with about 2 tablespoons of shredded cheese. Tightly roll each tortilla and place seam-side-down in sauce. Top with remaining sauce and cheese.

    5. Cover and bake for 30 minutes.

    6. Garnish with chopped green onion and sour cream if desired.
