    1 ½ c. Barber 1833 Cheddar, shredded and divided
    1 tbsp. Hy-Vee baking powder
    2 tbsp. Hy-Vee granulated sugar
    1 tsp. Hy-Vee salt
    1 (12-oz.) can beer
    2 tbsp. Hy-Vee unsalted butter, melted

    • Hy-Vee nonstick cooking spray
    • Large bowl
    • Silicone pastry brush
    • Wooden toothpick
    • Wire cooling rack

    Directions

    1. Preheat oven to 375 degrees. Spray a 9x5-inch loaf pan with nonstick cooking spray; set aside.

    2. In a large bowl, combine flour, 1-1/4 cups Cheddar cheese, baking powder, granulated sugar, and salt. Add beer, all at once, and mix until just combined; batter will be lumpy.

    3. Pour batter into prepared pan. Brush with melted butter. Bake 50 minutes. Remove loaf from oven and top with remaining 1/4 cup shredded cheese. Bake an additional 10 minutes or until toothpick inserted near center comes out clean.

    4. Cool 10 minutes on a wire cooling rack, turn out, and remove from loaf pan.
