Preheat oven to 375 degrees. Spray a 9x5-inch loaf pan with nonstick cooking spray; set aside.
Cheddar cheese, beer, and bread. Need we say more about this recipe? It's just as good as it sounds.

|1 ½ c.||Barber 1833 Cheddar, shredded and divided|
|1 tbsp.||Hy-Vee baking powder|
|2 tbsp.||Hy-Vee granulated sugar|
|1 tsp.||Hy-Vee salt|
|1||(12-oz.) can beer|
|2 tbsp.||Hy-Vee unsalted butter, melted|

In a large bowl, combine flour, 1-1/4 cups Cheddar cheese, baking powder, granulated sugar, and salt. Add beer, all at once, and mix until just combined; batter will be lumpy.
Pour batter into prepared pan. Brush with melted butter. Bake 50 minutes. Remove loaf from oven and top with remaining 1/4 cup shredded cheese. Bake an additional 10 minutes or until toothpick inserted near center comes out clean.
Cool 10 minutes on a wire cooling rack, turn out, and remove from loaf pan.
