Directions
Sprinkle ice water, 1 tablespoon at a time, over flour mixture; gently toss with a fork until dough forms a ball. Divide dough in half, shape each portion into a ball.
Roll each pastry from center to the edge, working to create uniform circles. Ease one portion of pie pastry into prepared pan, trimming so 1 inch hangs over the edge. Fill with apple pie filling and top with remaining shredded cheese then remaining pie dough. Pierce with a knife to create vents and crimp edges to seal.
Bake pie on lowest oven rack for 15 minutes. Reduce oven temperature to 350 degrees and bake 50 minutes more or until crust is golden brown and crisp. Cool on a wire cooling rack.
