    1 tbsp. Carotino fruit oil
    3 slice(s) Hy-Vee pre-cooked bacon, chopped
    1 shallot, diced
    2 clove(s) garlic, minced
    1 lbs. fresh spinach, trimmed, cut into 2-inch pieces
    1 ½ c. Hy-Vee reduced-sodium chicken broth
    Hy-Vee salt and Hy-Vee black pepper, to taste
    ⅛ tsp. ground cayenne pepper
    1 (14.5 oz) can Hy-Vee diced tomatoes, drained

    Directions

    1. Heat oil in a large saucepan over medium-high heat. Add bacon, shallot and garlic. Cook until vegetables are tender, about 5 minutes.
    2. Add spinach. Fry until it starts to wilt, about 1 minute.
    3. Stir in chicken broth, salt, black pepper and cayenne pepper. Reduce heat to low. Cover. Simmer for 35 minutes.
    4. Stir in tomatoes. Cover. Simmer for an additional 5 minutes.
