    1 (3 oz) pouch Hy-Vee premium light albacore tuna in water
    1 tsp. grated fresh ginger root
    ¼ tsp. cayenne
    3 tbsp. finely chopped onion
    ¼ c. Hy-Vee light mayonnaise
    ½ tsp. fresh lemon juice
    4 c. Hy-Vee spring salad mix, divided

    Directions

    1. With a fork, flake tuna into small bowl. Stir in remaining ingredients except spring mix.
    2. Refrigerate until ready to serve. To serve, divide spring mix between two serving plates. Top each with half the tuna mixture.
