Description

2 c. Kerrygold pure Irish butter, cut into ¼-in.-thick slices
2 lemons, sliced
1 (12-oz.) Fish Market fresh salmon fillet, skin removed
¼ c. Big Moe Cason fish and seafood rub
¼ c. Hy-Vee Thai chili sauce

  • Charcoal or gas grill

Directions

  1. Preheat a charcoal or gas grill for direct cooking over medium heat (350 degrees).

  2. Line a 12-in. cast iron skillet with butter slices. Top with lemon slices.

  3. Cut salmon fillet crosswise in half. Pat dry with paper towels. Spray both sides of salmon with nonstick spray. Season generously with fish and seafood rub.

  4. Place skillet on grill grate; grill for 8 to 10 minutes or until salmon reaches 140 degrees, turning salmon halfway through. Brush salmon with chili sauce. Grill for 2 to 3 minutes more or until fish flakes easily with fork (145 degrees).
