    ¾ tsp. Hy-Vee granulated sugar
    ¾ tsp. Hy-Vee ground ginger
    1 tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee crushed red pepper flakes
    4 Hy-Vee pork chops
    ¼ c. fresh mango, diced and peeled
    ¼ c. tomato, diced
    ¼ c. fresh cilantro, chopped
    ¼ c. red onion, chopped
    1 tbsp. Hy-Vee Select red wine vinegar
    2 tsp. Hy-Vee Select extra-virgin olive oil

    Directions

    1. Prepare a charcoal or gas grill for direct grilling over medium heat.
    2. For the pork chops, combine coriander, cumin, sugar, ginger, salt and pepper flakes. Rub over both sides of pork chops.
    3. Grill pork chops 14 to 16 minutes, turning once halfway through cooking, or until internal temperature reaches 145 degrees.
    4. Meanwhile, for the salsa, combine, mango, tomato, cilantro, red onion, vinegar and olive oil. Serve salsa with pork chops.
