1 tbsp. canola oil
1 large yellow onion, quartered and sliced
Coarse salt and freshly ground black pepper, to taste
Pinch cayenne pepper, optional
1 (8 oz) container Galaxy Nutritional Foods Veggie classic plain dairy-free cream cheese alternative, at room temperature
½ c. sour cream alternative, at room temperature
Pita chips and vegetables, for serving

Directions

  1. Heat canola oil in a large skillet over medium heat. Add onions and lightly season with salt and pepper. Cook, stirring occasionally, for 5 minutes or until onions begin to soften. Reduce heat to medium-low and continue to cook, stirring occasionally, until onions are deeply golden brown, about 30 minutes. Remove from heat and let cool to room temperature. Stir in cayenne pepper, if desired. Season to taste with salt and pepper.
  2. Beat together cream cheese alternative and sour cream alternative. Fold in onions. Cover and refrigerate until ready to serve.
  3. For easier dipping, let dip stand at room temperature for 10 minutes before serving with pita chips and vegetables.
