24 cherry tomatoes, quartered if desired | ||
1 (2.25 oz) can sliced black olives, drained | ||
1 lbs. fresh buffalo mozzarella, diced | ||
½ c. chopped/torn fresh basil | ||
¼ c. olive oil | ||
2 tbsp. balsamic vinegar | ||
salt and coarse black pepper, to taste |
Directions
- In a mixing bowl, combine tomatoes, olives, mozzarella and basil. Toss with olive oil and balsamic vinegar. Season to taste with salt and pepper.
- Serve in mini martini glasses, with spoons or appetizer forks.
