|1 ½ tsp. baking soda|
|1 tsp. gluten-free baking powder|
|¼ c. tapioca flour (not starch)|
|¾ c. gluten-free baking mix|
|1 tbsp. corn oil|
|1 c. buttermilk|

- Beat egg in bowl with a fork.
- Sift together baking soda, baking powder and tapioca flour.
- Mix beaten egg, sifted dry ingredients, baking mix, corn oil and buttermilk.
- Let stand for 5 minutes.
- Fry on a 375-degree skillet until done. Best if flipped only once.
