This healthy take on buffalo chicken is easy to bake, skewer, and serve.
Servings and Ingredients
|1 lbs.||Hy-Vee boneless skinless chicken breasts|
|3 tbsp.||Hy-Vee Hickory House Tres Caliente rub|
|4 tbsp.||Hy-Vee buffalo wing sauce, divided|
|1 pt.||grape or cherry tomatoes|
|1 c.||bleu cheese dressing|
|¼ c.||bleu cheese crumbles|
Things To Grab
- Preheat oven to 450 degrees. Place cooling rack on baking pan; set aside.
- Coat chicken breasts with rub. Place on prepared rack and bake 15 minutes. Remove chicken from oven and brush with 2 tablespoons buffalo wing sauce.
Reduce heat to 350 degrees and bake chicken 10 minutes more, or until chicken reaches an internal temperature of 165 degrees. Let chicken cool slightly; cut into 1-inch cubes.
Skewer chicken onto wooden skewers and top each with a tomato. Brush remaining buffalo sauce on chicken.
For bleu cheese dip, in a small bowl combine bleu cheese dressing and bleu cheese crumbles. Serve skewers with dip.
