    4 (4 to 5 oz each) Atlantic salmon fillets
    1 tbsp. Hy-Vee Select olive oil
    2 tsp. fresh lemon juice
    1 clove(s) garlic, minced
    2 tsp. fresh rosemary, chopped or 1 tsp dried rosemary, crushed
    ½ medium red onion, thinly sliced
    Fresh rosemary and lemon wedges, for serving

    Directions

    1. Place salmon fillets in a large resealable plastic bag. In a small bowl combine oil, lemon juice, garlic and rosemary. Pour oil mixture over salmon; seal bag and turn to coat. Refrigerate 15 minutes.
    2. Meanwhile, coat broiler rack with nonstick cooking spray. Preheat broiler. Remove salmon from marinade; discard marinade. Broil salmon 4 to 6 minutes per side or until fish flakes easily with a fork.
    3. During the last 3 minutes of broiling, arrange slices of red onion on top of fillets. Serve with additional fresh rosemary and lemon wedges.
