Butterfly lobster tails by cutting through the center of the shells with kitchen shears, stopping about 3/4-inch before the tail. Pull shell apart. Loosen lobster meat and lift from the shell, keeping the end near the tail attached. Rest meat on the shell; place tails on prepared pan.
