Unfold 1 thawed sheet of frozen puff pastry onto a lightly floured surface. Cut crosswise into 1/2-inch strips. Place Brie rounds on prepared baking sheet; arrange pastry strips on top of each round. Bake 25 to 30 minutes or until pastry is lightly browned. Remove from oven.
Garnish with dried apricots and dried cranberries for eyes. Cool slightly before serving. Serve with additional dried fruit and crackers, if desired.
