    4 (8-inch) Hy-Vee flour tortillas
    8 (1-oz. each) slices Hy-Vee Colby-Jack cheese
    4 Hy-Vee large eggs
    4 Eckrich smok-y original breakfast sausage links
    ½ avocado, seeded, peeled, and sliced
    1 medium red bell pepper, seeded and diced
    1 green onion, finely chopped
    Hy-Vee salt, to taste
    Hy-Vee black pepper, to taste

    Directions

    1. Preheat oven to 375 degrees. Line a rimmed baking pan with parchment paper. Arrange tortillas on prepared pan. Top each tortilla with 2 cheese slices. Bake for 5 to 7 minutes or until cheese is melted.

    2. Coat a small skillet with nonstick cooking spray; heat over medium heat. Break on egg into skillet. Cook for 2 to 3 minutes or until white is completely set and yolk starts to thicken. Remove egg from skillet; keep warm. Repeat with remaining eggs; keep warm.

    3. Cook sausage according to package directions. Cut each piece into thirds. Place one egg on each tortilla. Add sausage, avocado, red pepper, and green onion. Season to taste with salt and black pepper.
