|2 c.||onion, chopped|
|1 ½ c.||frozen Hy-Vee Southern-style hash brown potatoes|
|1 c.||red bell pepper, seeded and chopped|
|8 oz.||French loaf bread, cut into 1-inch cubes|
|1||(8-oz.) pkg Hy-Vee shredded Colby jack cheese, divided|
|5||Hy-Vee large eggs|
|3 c.||Hy-Vee skim milk|
|1 tsp.||Hy-Vee Italian seasoning|
|Hy-Vee salt, to taste|
|Hy-Vee pepper, to taste|

Heat oil in a large skillet over medium-high heat. Brown sausage; remove from pan. Add onion, potato and bell pepper to skillet; sauté 5 minutes or until tender. In a large bowl combine sausage, sautéed mixture and bread cubes.
Spread half in prepared baking dish; top with half of cheese. Top with remaining bread mixture and remaining cheese.
Whisk milk, eggs and Italian seasoning in a large bowl. Pour over bread mixture. Cover and refrigerate for at least 30 minutes up to overnight.
Bake for 50 minutes or until center is set.
