4 c. fresh sweet potatoes (yams), cooked and mashed (about 3 1/2 lbs)
⅓ c. plus 1 tbsp packed Hy-Vee brown sugar, divided
½ tsp. Hy-Vee salt
¼ c. Hy-Vee evaporated milk
2 tbsp. Hy-Vee butter, melted
1 tbsp. brandy
2 tbsp. Hy-Vee pecan pieces

Directions

  1. Preheat oven to 350 degrees. With an electric mixer, combine sweet potatoes, 1/3 cup brown sugar, salt, evaporated milk, butter and brandy.
  2. Pour mixture into an ungreased 8-by-8-inch baking dish. Sprinkle with remaining brown sugar and pecans. Bake uncovered for 15 minutes.
