    Hy-Vee sweetened flaked coconut, finely chopped, for garnish
    1 lime, zested and juiced, divided
    15 fresh mint leaves, plus additional for garnish
    ½ tbsp. Hy-Vee granulated sugar
    1 oz. Hy-Vee unsweetened coconut water
    2 oz. white rum
    1 oz. blue curacao
    4 oz. Hy-Vee lemon-lime soda

    • Wooden muddler or spoon
    • Ice
    • 16-oz. cocktail glass

    Directions

    1. Run a lime wedge along the rim of a 16-oz. cocktail glass. Immediately dip into coconut flakes; fill with ice and set aside. 

    2. Place lime zest, 15 fresh mint leaves, and granulated sugar in a cocktail shaker. Muddle together with a wooden muddler or large spoon. Add lime juice, coconut water, rum, and blue curacao. 

    3. Add ice cubes and shake until well combined and chilled. Strain into prepared cocktail glass; top with 4-oz. soda. Garnish with additional fresh mint leaves, if desired.
