|1 lime, zested and juiced, divided|
|15 fresh mint leaves, plus additional for garnish|

|1 oz. Hy-Vee unsweetened coconut water|
|2 oz. white rum|
|1 oz. blue curacao|
|4 oz. Hy-Vee lemon-lime soda|

Place lime zest, 15 fresh mint leaves, and granulated sugar in a cocktail shaker. Muddle together with a wooden muddler or large spoon. Add lime juice, coconut water, rum, and blue curacao.
Add ice cubes and shake until well combined and chilled. Strain into prepared cocktail glass; top with 4-oz. soda. Garnish with additional fresh mint leaves, if desired.
