If you like to order your fish blackened, you'll love this simple spice blend using paprika, chili powder, brown sugar, garlic, and salt and pepper.

2 whole fresh catfish, about 2 to 3 pounds | ||
2 tsp. Hy-Vee canola oil |

- Large baking sheet
- Aluminum foil
- Hy-Vee nonstick cooking spray
- Meat thermometer
Directions
- Preheat oven to broil on HIGH.
- In small bowl combine paprika, salt, chili powder, brown sugar, black pepper and garlic powder.
- Wash and pat catfish dry. Coat lightly with canola oil. Sprinkle with spice blend on both sides until coated.
Line baking sheet with foil and spray with nonstick cooking spray. Broil fish about 12 minutes, turning carefully after 7 minutes, or until fish flakes easily (145 degrees). Allow fish to rest 2 minutes before serving.
