Update the classic margarita by blending together fresh thyme and blackberries.
Servings and Ingredients
|18 fresh blackberries, plus additional for garnish|
|4 sprig(s) fresh thyme|
|1 ½ crushed ice|
|½ c. silver tequila|
|½ c. fresh lime juice|
|⅓ c. orange liqueur, such as Cointreau|
|¼ c. simple syrup, optional|
|¼ c. sparkling wine, or sparkling water|

- Fine-mesh sieve
- Small bowl
- Place the blackberries in a food processor with the thyme leaves. Pulse 30 seconds. Push the blackberry puree through a fine-mesh sieve into a small bowl to remove seeds, pressing on solids to extract as much liquid as possible.
- Combine the blackberry puree, ice, tequila, lime juice, orange liqueur, syrup (if using), and 1/4 cup sparkling wine into a blender. Puree until smooth and well combined; add additional sparkling wine if you want a thinner consistency. Divide between glasses, and garnish with additional thyme and the reserved blackberries.
