    18 fresh blackberries, plus additional for garnish
    4 sprig(s) fresh thyme
    1 ½ crushed ice
    ½ c. silver tequila
    ½ c. fresh lime juice
    ⅓ c. orange liqueur, such as Cointreau
    ¼ c. simple syrup, optional
    ¼ c. sparkling wine, or sparkling water

    • Fine-mesh sieve
    • Small bowl

    Directions

    1. Place the blackberries in a food processor with the thyme leaves. Pulse 30 seconds. Push the blackberry puree through a fine-mesh sieve into a small bowl to remove seeds, pressing on solids to extract as much liquid as possible.
    2. Combine the blackberry puree, ice, tequila, lime juice, orange liqueur, syrup (if using), and 1/4 cup sparkling wine into a blender. Puree until smooth and well combined; add additional sparkling wine if you want a thinner consistency. Divide between glasses, and garnish with additional thyme and the reserved blackberries.
