3 tbsp.olive oil
1 tbsp.fresh lime juice
2 c.cooked red quinoa (at room temperature or cold)
1mango, peeled, seeded and diced
1handful chopped cilantro
1(15 oz) can black beans
1red bell pepper, chopped
6green onions, thinly sliced

Directions

  1. In a small bowl, combine vinegar, oil and lime juice.
  2. Combine remaining ingredients in a large bowl. Drizzle dressing over the salad, and toss until well combined. Chill for about an hour.
