    12 Hy-Vee snack crackers
    4 oz. Parrano cheese, thinly sliced
    ¼ c. seedless raspberry preserves
    1 ½ tbsp. coarsely chopped pistachios
    Sugared cranberries, for garnish*
    Mint leaves, for garnish

    Directions

    1. Top crackers with cheese slices and raspberry jam. Sprinkle with pistachios. If desired, garnish with sugared cranberries and mint leaves.
    2. *Note: For sugared cranberries, in a medium saucepan bring 1/2 cup Hy-Vee sugar and 1/2 cup water to a boil; reduce heat. Simmer, uncovered, just until sugar dissolves, stirring constantly. Remove from heat; stir in 1/2 cup fresh cranberries. Refrigerate until berries are cool. Drain well and toss berries with 1/2 cup superfine sugar. Transfer berries to waxed paper to dry.
