Berry-Pistachio Parrano Cheese Bites
Servings and Ingredients
|12 Hy-Vee snack crackers|
|4 oz. Parrano cheese, thinly sliced|
|¼ c. seedless raspberry preserves|
|1 ½ tbsp. coarsely chopped pistachios|
|Sugared cranberries, for garnish*|
|Mint leaves, for garnish|
- Top crackers with cheese slices and raspberry jam. Sprinkle with pistachios. If desired, garnish with sugared cranberries and mint leaves.
- *Note: For sugared cranberries, in a medium saucepan bring 1/2 cup Hy-Vee sugar and 1/2 cup water to a boil; reduce heat. Simmer, uncovered, just until sugar dissolves, stirring constantly. Remove from heat; stir in 1/2 cup fresh cranberries. Refrigerate until berries are cool. Drain well and toss berries with 1/2 cup superfine sugar. Transfer berries to waxed paper to dry.
