Preheat a charcoal or gas grill with greased grill grates for indirect grilling over medium-high heat.

|1||American BBQ Company classic barbeque-style spatchcock chicken with apple brine|
|4||Hy-Vee three-cheese twice baked potatoes|
|1||(1-lbs.) pkg. Hy-Vee Short Cuts sliced pineapple rings|
|Hy-Vee Texas Cattle Drive BBQ sauce, for serving|

- Charcoal or gas grill
- Meat thermometer
- Aluminum foil
Remove spatchcock chicken from packaging and grill, breast side down, for 10 to 15 minutes or until skin in charred and skin is crispy. Flip, and grill for 30 to 35 minutes, or until cooked through (165 degrees). Remove chicken from grill and tent with aluminum foil. Allow to rest 5 to 10 minutes.
While chicken is resting, add twice baked potatoes to grill. Grill potatoes according to package directions. During the last 5 minutes, add pineapple slices to the grill. Char each side of the pineapple slices for 2 to 3 minutes or until lightly charred.
To serve, cut spatchocock chicken into thin slices. Serve with twice baked potatoes, grilled pineapple, and barbecue sauce.
