BBQ Chicken Quesadilla
Servings and Ingredients
|½ c. cooked chopped chicken|
|2 tbsp. Hy-Vee barbecue sauce|
|2 tbsp. chopped red onion|
|2 tbsp. chopped yellow bell pepper|
|2 (6-inch) Hy-Vee flour tortilla|
|¼ c. Hy-Vee shredded Colby jack cheese|
- Lightly grease and preheat a waffle baker according to manufacturer's directions. (Use a regular or Belgian waffle baker.)
- In a bowl, combine chicken, barbecue sauce, red onion and yellow bell pepper. Spread mixture on a 6-inch Hy-Vee flour tortilla. Sprinkle with cheese. Cover with second tortilla. Bake in preheated waffle baker until golden.
