BBQ Beef and Coleslaw Sandwich
Servings and Ingredients
|2 lbs. Hy-Vee Angus Reserve boneless beef bottom round roast|
|1 c. Hy-Vee beef broth|
|1 c. red wine|
|¼ c. Hy-Vee apple cider vinegar|
|Hy-Vee barbecue sauce, to taste|
|8 Hy-Vee baking stone Asiago buns|
|2 c. Hy-Vee shredded coleslaw mix|
Things To Grab
- In a medium saute pan, sear all sides of roast over medium-high heat. Place roast, beef broth, wine and apple cider vinegar in a 3- to 4-quart slow cooker. Cover and cook on LOW for 8 to 9 hours.
- Drain beef and shred with two forks, discarding liquid. Toss beef with barbecue sauce. Place BBQ beef on bottom bun and top with coleslaw mix and top bun.
