Barbecued Beef Sandwiches
Servings and Ingredients
|2 lbs. boneless chuck roast|
|⅓ c. chopped onion|
|1 c. Hy-Vee honey smoke barbecue sauce|
|2 tbsp. Hy-Vee strawberry preserves|
|6 Hy-Vee hamburger buns, split and toasted|
- Trim excess fat from beef. Cut into 4 pieces. Place beef in a 3- to 5-quart slow cooker.
- Combine onion, barbeque sauce and strawberry preserves in a small bowl. Pour over beef. Cover and cook on HIGH 5 to 6 hours or until beef is tender.
- Remove beef from slow cooker and place in a large bowl. Shred with 2 forks. Return shredded beef to slow cooker. Stir to combine.
- Cover and cook on LOW for 20 to 30 minutes longer or until shredded beef is hot. Fill buns with shredded beef.
