    2 c.Hy-Vee reduced-fat baking mix
    1Hy-Vee large egg
    3 tbsp.Hy-Vee canola oil
    1 ⅓ c.Hy-Vee club soda
    ½ c.Hy-Vee unsalted butter
    ½ c.packed Hy-Vee brown sugar
    2medium bananas, peeled and sliced
    Hy-Vee cinnamon
    2 tbsp.banana rum liquor
    Hy-Vee English walnuts, optional

    Directions

    1. Stir baking mix, egg, canola oil and club soda until combined.
    2. Pour about 1/2 cup onto center of hot, greased waffle iron; close lid.
    3. Bake until steaming stops; carefully remove waffle. Repeat with remaining batter.
    4. In a medium saucepan, melt butter and brown sugar. Stir in sliced bananas and cook until heated through.
    5. Remove from heat; sprinkle with cinnamon. Stir in rum.
    6. Serve rum sauce over waffles. Sprinkle with additional cinnamon and walnuts, if desired.
