1 c. rice flour
½ c. soy flour
1 c. potato starch
3 tsp. gluten-free baking powder
3 eggs
½ c. sugar
½ tsp. salt
½ c. corn oil
2 tbsp. water
3 large or 4 small bananas, mashed
½ c. chopped nuts

Directions

  1. Mix rice flour, soy flour, potato starch and baking powder together in a bowl.
  2. In a separate bowl, blend together eggs, sugar, salt, corn oil and water.
  3. Blend mashed bananas into egg mixture.
  4. Stir flour mixture into banana mixture.
  5. Add chopped nuts.
  6. Pour into an 8.5-by-4-inch loaf pan.
  7. Bake at 350 degrees for 1 hour.
