3 | large or 4 small bananas, mashed | |
½ c. | chopped nuts |
Directions
- Mix rice flour, soy flour, potato starch and baking powder together in a bowl.
- In a separate bowl, blend together eggs, sugar, salt, corn oil and water.
- Blend mashed bananas into egg mixture.
- Stir flour mixture into banana mixture.
- Add chopped nuts.
- Pour into an 8.5-by-4-inch loaf pan.
- Bake at 350 degrees for 1 hour.
