    2 c.Hy-Vee original baking mix
    ¾ c.Hy-Vee granulated sugar
    1Hy-Vee large egg, slightly beaten
    1 c.mashed ripe bananas (about 2)
    2 tbsp.Hy-Vee skim milk
    2 tbsp.Hy-Vee canola oil

    Directions

    1. Preheat oven to 400 degrees.
    2. In a medium bowl combine baking mix and sugar. Stir in egg, banana, milk and oil just until moistened. Spoon into a greased muffin tin.
    3. Bake 15 to 17 minutes or until golden brown.
