1 tsp. grated orange rind | ||

1 ⅔ c. flour | ||
½ c. cranberries, coarsely chopped | ||
⅓ c. chopped walnuts |
Directions
- Preheat oven to 375 degrees.
- Grease 3 small (6-by-3-inch) loaf pans.
- Beat together butter and sugar until light and airy. Add eggs, bananas and orange rind.
- Combine salt, baking powder and flour. Add to butter mixture. Mix well and stir in cranberries and walnuts.
- Divide evenly into loaf pans. Bake for 45-55 minutes or until an inserted toothpick comes out clean. Remove from pans and cool on wire rack.
- Slice and enjoy warm or at room temperature.
