    2 c. uncooked Hy-Vee instant brown rice
    1 ¾ c. vegetable broth
    1 (6 oz) pkg grilled chicken breast strips
    1 c. chopped red pepper
    1 c. Hy-Vee frozen peas, thawed
    1 c. sliced fresh mushrooms
    ½ c. balsamic vinaigrette

    Directions

    1. Prepare brown rice according to package directions using vegetable broth instead of water.
    2. Meanwhile, sauté chicken strips, red pepper, peas and mushrooms in a large, non-stick skillet over medium heat until the chicken is heated through and the vegetables are crisp-tender, about 5 minutes.
    3. Add cooked rice and balsamic vinaigrette to the skillet. Toss well.
