1 (6 oz) pkg grilled chicken breast strips | ||
1 c. chopped red pepper | ||
1 c. Hy-Vee frozen peas, thawed | ||
1 c. sliced fresh mushrooms | ||
½ c. balsamic vinaigrette |
Directions
- Prepare brown rice according to package directions using vegetable broth instead of water.
- Meanwhile, sauté chicken strips, red pepper, peas and mushrooms in a large, non-stick skillet over medium heat until the chicken is heated through and the vegetables are crisp-tender, about 5 minutes.
- Add cooked rice and balsamic vinaigrette to the skillet. Toss well.
