It's not every day that you bake pancakes! Bake the batter in an 8-by-8 baking dish for fluffy pancake squares.

|¾ c. Hy-Vee original soymilk|
|2 tbsp. Hy-Vee butter, melted|
|1 Hy-Vee large egg|
|1 tbsp. Hy-Vee granulated sugar|
|¾ c. Hy-Vee flour|
|¼ c. soy flour|
|2 tsp. Hy-Vee baking powder|
|¼ tsp. Hy-Vee salt|
|1 tsp. Hy-Vee ground cinnamon|
|¼ tsp. Hy-Vee ground nutmeg|
|Hy-Vee pancake syrup, optional|

- Preheat oven to 350 degrees. In a large mixing bowl, beat together milk, butter and egg. Stir in sugar.
Gradually beat in flours. Stir in baking powder, salt, cinnamon and nutmeg. Pour into a greased 8-by-8-inch baking pan.
Bake for 25 to 30 minutes or until toothpick inserted in the center comes out clean. Serve with Hy-Vee pancake syrup if desired.
