    2 tsp. Hy-Vee Select garlic-flavored olive oil
    6 (4 oz each) boneless lean pork chops
    1 (8 oz) pkg sliced fresh mushrooms
    1 (12 oz) jar pork gravy
    Hot mashed potatoes, for serving

    Directions

    1. Heat oil in a large non-stick skillet over medium heat. In 2 batches if necessary, brown pork chops on both sides, about 3 minutes per side. Remove from skillet and place in a 13-by-9-inch baking dish that has been sprayed with non-stick cooking spray.
    2. Add mushrooms to same skillet and cook, stirring frequently, until browned and tender, about 10 minutes. Stir in gravy and bring to a boil. Remove from heat and pour over pork chops.
    3. Bake at 350 degrees for 10 to 15 minutes or until internal temperature reaches 145 degrees.
    4. Serve pork chops and mushroom gravy over mashed potatoes, if desired.
