    1 tsp. finely grated lemon peel
    2 tbsp. fresh lemon juice
    2 tbsp. chopped fresh oregano
    1 tbsp. Hy-Vee reduced-sodium soy sauce
    2 garlic cloves, minced
    1 tbsp. Hy-Vee Select olive oil
    8 chicken drumsticks

    Directions

    1. Combine all ingredients into a large resealable plastic bag. Turn bag to coat chicken. Marinate in refrigerator at least 2 hours or up to 2 days, turning occasionally.
    2. Preheat oven to 425 degrees. Line baking pan with foil and top with a cooling rack.
    3. Add chicken, discarding any marinade. Bake chicken 40 to 45 minutes or until chicken reaches 165 degrees.
