    To cut down on salt and add more whole grains to your diet, look for Hy-Vee whole wheat bread crumbs. You can add your own Italian seasonings such as oregano, basil, garlic powder, and thyme.

    1 (26 oz) jar Hy-Vee traditional pasta sauce, divided
    4 (4 oz each) Hy-Vee 100% natural boneless, skinless chicken breasts
    ½ c. Hy-Vee flour
    Hy-Vee salt and freshly ground Hy-Vee pepper, to taste
    1 Hy-Vee large egg
    2 tbsp. Hy-Vee skim milk
    1 c. Hy-Vee seasoned bread crumbs
    ¼ c. Hy-Vee shredded Parmesan cheese
    2 tbsp. Hy-Vee Select olive oil, plus more if necessary
    1 c. Hy-Vee shredded mozzarella cheese

    Directions

    1. Preheat oven to 400 degrees. Spread 1 cup pasta sauce in the bottom of a 13-by-9-inch baking dish.
    2. Place chicken breasts between 2 pieces of plastic wrap. Pound to 1/2-inch thickness with a meat mallet or a rolling pin.
    3. Combine flour, salt and pepper in shallow bowl. Whisk together egg and skim milk in another shallow bowl. Combine bread crumbs, Parmesan cheese, salt and pepper in third shallow bowl.
    4. Dredge 1 chicken breast in flour; shake off excess. Dip in egg; let excess drip off. Dredge in bread crumb mixture; shake off excess. Repeat with remaining chicken breasts.
    5. Heat oil in a large skillet over medium-high heat. Add breaded chicken, in batches if necessary, to skillet and cook for 3 minutes or until golden brown. Flip and cook for 3 minutes or until golden brown. Place in prepared baking dish.
    6. Spoon remaining pasta sauce over chicken. Sprinkle with mozzarella cheese.
    7. Bake for 15 to 20 minutes or until sauce is bubbly and cheese is melted.
