    4 (1-lb.) Hy-Vee True boneless skinless chicken breasts
    ¼ c. prepared pesto, divided
    1 large tomato, sliced
    ½ c. Hy-Vee shredded whole milk mozzarella cheese

    • Nonstick cooking spray
    • Aluminum foil

    Directions

    1. Preheat oven to 350 degrees. Spray a 9-by-13-inch casserole dish with nonstick cooking spray.

    2. Pat chicken dry with paper towels; place into prepared casserole dish. Spread 1 tablespoon pesto on each chicken breast, top with tomato slices and sprinkle each piece of chicken with 2 tablespoons cheese. 

    3. Bake 15 to 20 minutes or until chicken reaches an internal temperature of 165 degrees. If cheese begins to over-brown, cover with aluminum foil. Allow chicken to rest 5 minutes. Serve hot.
