2 large carrots, peeled and cut into sticks
1 tbsp. Gustare Vita olive oil
¼ c. Hy-Vee grated Parmesan cheese, plus additional for garnish
¼ c. fresh parsley, chopped
1 tbsp. Hy-Vee garlic powder
1 tsp. Hy-Vee ground black pepper
½ tsp. Hy-Vee salt
Dipping Sauce
¼ c. Hy-Vee plain Greek yogurt
1 tsp. Hy-Vee garlic powder
½ tsp. fresh dill, chopped
Hy-Vee salt
Hy-Vee ground black pepper

Directions

  1. Preheat oven to 400 degrees. Line a large rimmed baking sheet with parchment paper, set aside. 

  2. In a large bowl, toss carrots with olive oil, Parmesan cheese, parsley, garlic powder, black pepper, and salt. Spread carrots on prepared baking sheet and bake 15 to 20 minutes or until crispy.

  3. Meanwhile, make Dipping Sauce: In a small bowl, mix together Greek yogurt, garlic powder, and fresh dill. Season with salt and pepper. Refrigerate until ready to serve. 

  4. Remove baked carrots from oven and garnish with additional Parmesan cheese. Serve immediately with dipping sauce.
