1 c. sifted flour
¼ c. sugar
2 tsp. baking powder
½ tsp. salt
3 tbsp. shortening
½ c. milk
½ c. chopped nuts or raisins
½ tsp. vanilla
1 c. sugar
3 c. boiling water
2 tbsp. butter
1 tsp. vanilla
whipped cream or ice cream, for serving

Directions

  1. Mix flour, 1/4 cup sugar, baking powder, salt, shortening, milk, nuts and vanilla as you would prepare drop biscuits.
  2. Melt 1 cup sugar in heavy oven-proof skillet, being careful not to burn the sugar. Add boiling water, butter and vanilla.
  3. Drop pudding mixture into boiling syrup by the spoonful (not too large spoonfuls) to fill the skillet.
  4. Bake at 350 degrees for 15 to 20 minutes in the skillet.
  5. Serve warm or cold as is, or add a dollop of whipped cream or ice cream.
