½ c. chopped white onion | ||
1 tbsp. Hy-Vee margarine | ||
1 (15 oz) can Hy-Vee Spanish rice | ||
1 avocado, peeled, pitted and chopped | ||
4 (10 inch) Hy-Vee flour tortillas | ||
1 (16 oz) can Hy-Vee refried black beans | ||
1 c. Hy-Vee enchilada sauce | ||
1 c. Hy-Vee shredded Mexican cheese blend |
Directions
- Preheat oven to 400 degrees.
- Sauté onion in margarine.
- Combine Spanish rice, avocado and sautéed onion in a medium bowl.
- Evenly spread each tortilla with refried beans to within 1/4 inch of edge.
- Top each tortilla with rice mixture. Fold in sides and roll up each tortilla.
- Place burritos seam-side-down in an ungreased 13-by-9-inch baking dish.
- Pour enchilada sauce over burritos and sprinkle with cheese.
- Bake for about 10 minutes or until cheese is melted and burritos are heated.
