    ½ c. chopped white onion
    1 tbsp. Hy-Vee margarine
    1 (15 oz) can Hy-Vee Spanish rice
    1 avocado, peeled, pitted and chopped
    4 (10 inch) Hy-Vee flour tortillas
    1 (16 oz) can Hy-Vee refried black beans
    1 c. Hy-Vee enchilada sauce
    1 c. Hy-Vee shredded Mexican cheese blend

    Directions

    1. Preheat oven to 400 degrees.
    2. Sauté onion in margarine.
    3. Combine Spanish rice, avocado and sautéed onion in a medium bowl.
    4. Evenly spread each tortilla with refried beans to within 1/4 inch of edge.
    5. Top each tortilla with rice mixture. Fold in sides and roll up each tortilla.
    6. Place burritos seam-side-down in an ungreased 13-by-9-inch baking dish.
    7. Pour enchilada sauce over burritos and sprinkle with cheese.
    8. Bake for about 10 minutes or until cheese is melted and burritos are heated.
