Bacon Salmon Burger

|1 c.||Hy-Vee panko breadcrumbs|
|3 tbsp.||Hy-Vee grated Parmesan cheese|
|3 tbsp.||chopped chives|
|Zest of one lemon|
|1 tsp.||kosher salt|
|4||Hy-Vee Chef Kim's homemade Alaska sockeye classic salmon patties|
|4||Hy-Vee Bakery hamburger buns|
|1||medium red bell pepper, sliced into rings, grilled|
|8 slice(s)||Hy-Vee bacon, cooked and diced|
- Preheat oven to 375 degrees. Spread panko on a cookie sheet and bake until golden brown, about 3 to 4 minutes. In a small bowl, combine toasted panko crumbs with Parmesan cheese, chives, lemon zest and kosher salt; set aside.
- Grill salmon patties until fish becomes firm and opaque, about 5 minutes per side. Place patty on top of lettuce leaf on a bakery roll. Top salmon patty with panko mixture, grilled red pepper, diced bacon and bun top.
