Description

This Mediterranean classic is very easy to make at home.

3 medium eggplants
½ c. tahini
½ c. plain yogurt
Juice of 3 lemons or to taste
Salt, to taste
Extra-virgin olive oil, for drizzling
Pita chips or veggies, for serving

Directions

  1. Char eggplant on an open flame for about 15 minutes, or bake in a 400-degree oven for about 30 minutes or until soft. Let cool slightly, cut each in half lengthwise and spoon out the pulp. Discard the skin.
  2. Chop the pulp into small pieces and combine in a bowl with tahini, yogurt, lemon juice and salt.
  3. Drizzle with olive oil and serve with pita chips or veggies.
