Avocado Shrimp Bites
Quite possibly the best of use of the scoop-shaped chips—it's sour cream and avocado topped with barbecue shrimp.
Servings and Ingredients
|1 c.||Hy-Vee sour cream|
|Juice of 2 limes|
|1||avocado, peeled, pitted, quartered and sliced|
|Fresh cilantro, as needed|
|16||(21 to 30 ct) shrimp, cooked and peeled|
|3 tbsp.||Weber Kansas City BBQ rub|
- Combine sour cream and lime juice. Spread on each Tostito; top with avocado slices and cilantro.
- Toss together shrimp and rub and place a shrimp on top of each Tostito.
