3 ripe avocados, peeled, pitted and sliced
2 tbsp. fresh lime juice
6 radishes, trimmed
1 ½ c. cooked peas, chilled
1 ½ tsp. chopped fresh mint
Kosher salt and freshly cracked Hy-Vee black pepper, to taste

Directions

  1. Brush avocado slices with lime juice; set aside.
  2. Using a mandoline slicer or sharp knife, thinly slice radishes; place in a bowl. Add peas and mint. Arrange avocado slices on salad plates. Top with radish and peas mixture. Season to taste with salt and pepper. Serve immediately.
