1 (13.25 oz) package Hy-Vee whole wheat angel hair pasta
¼ c. Hy-Vee soy sauce
2 tbsp. Hy-Vee Select balsamic vinegar
1 tsp. packed Hy-Vee brown sugar
1 clove(s) garlic, minced
cayenne pepper, to taste
2 tbsp. peanut oil
1 c. sliced carrots
½ medium red onion, thinly sliced
2 c. sliced fresh mushrooms

Directions

  1. Cook pasta according to package directions.
  2. Stir together soy sauce, balsamic vinegar, brown sugar, garlic and cayenne pepper; set aside.
  3. Heat oil in a wok or large non-stick skillet over medium-high heat. Add carrots, onions and mushrooms. Stir-fry for 2 to 4 minutes, until onions are softened and carrots begin to brown.
  4. Add soy sauce mixture to the pan. Cook for 30 seconds. Add drained pasta to the pan. Toss to combine.
