1 ½ c. (8 oz) uncooked orzo
1 tbsp. Hy-Vee Select olive oil
1 c. chopped red onion
2 clove(s) garlic, minced
2 c. arugula leaves
3 tbsp. Hy-Vee balsamic vinaigrette
Hy-Vee salt and Hy-Vee black pepper, to taste

Directions

  1. Prepare orzo in water according to package directions; drain but do not rinse.
  2. Meanwhile, in a large skillet heat oil over medium heat. Add onion and cook for 3 minutes or until softened, stirring constantly. Add garlic and cook 1 minute more. Remove from heat.
  3. Stir in orzo, arugula and vinaigrette. Season to taste to salt and pepper.
