    ¼ tsp. ground ginger
    1 can(s) (15-ounce) apricots, drained
    2 package(s) Honeysuckle White Boneless Skinless Turkey Breasts (about 2 1/2 pounds)

      Directions

      Preheat oven to 350 degrees F.

      1. Whisk together apricot jam, orange juice and ginger.

      2. Season turkey with salt and pepper; brush with apricot jam mixture.

      3. Roast about 30 minutes, basting occasionally with pan juices, until internal temperature reaches 165 degrees F.

      4. Transfer turkey to platter; keep warm. Pour pan juices into skillet over medium heat, add apricots and simmer until apricots are warm.

      5. Spoon sauce and apricots over turkey.
