    1 (14 oz) can Hy-Vee reduced-sodium chicken broth
    1 (18 oz) jar Hy-Vee apricot preserves
    1 large onion, chopped
    2 tbsp. Hy-Vee Dijon-style mustard
    3 ½ lbs. boneless pork loin roast
    2 tbsp. cornstarch
    2 tbsp. cold water

    Directions

    1. Stir together broth, preserves, onion and mustard in a slow cooker. Add pork and turn to coat. Cover and cook on LOW 8 hours or until roast is tender.
    2. Remove roast from slow cooker.
    3. Mix cornstarch and water and stir in juices in slow cooker. Cover and cook on HIGH for 10 minutes or until mixture thickens and boils. Serve sauce with roast.
